Cheesy bacon muffins

I love cakes, muffins, baked rice/ pasta, pies, etc but am too lazy to really bake. However, when the mood comes, my reliable toaster oven does the job!

Inspired by savory muffins, it will be cheesy bacon for today. They tasted nice and savory, something similar to biscuits that come with fried chicken in some fast food outlets, but a little herb to this recipe could zest it up. I might add some dried rosemary or thyme or parsley next time.

The recipe is really simple:

Ingredients (makes 6):
Plain flour 200g
Baking powder or soda 1 tsp
Salt 1/2 tsp
Sugar 1 tsp
Eggs 2, beaten
Milk 125ml
Butter, melted 100ml
Cheddar cheese shreds 200g
Bacon bits 100g

1. Preheat toaster over to 180°c
2. Butter the 6 ramekins (I used ramekins as I do not have muffin tins)
3. Sift together flour, baking powder and salt
4. Add sugar and mix well
5. In a mixing bowl, combine eggs and milk
6. To the dry ingredients, add the egg mixture, add melted butter, cheddar and bacon bits, mix well (I used a whisk to mix)
7. Fill the ramekins to 3/4 full. Bake for about 18min
8. Simply overturn the ramekin, shake a little and the muffin pops out. Serve immediately
