Warm pineapple & banana crumble

Fancy a warm but tangy and light dessert? This recipe will fit the bill. We like that it’s light, easy to prepare, and if preferred, a scoop of vanilla or banana ice cream will make this dish more indulgent.

Most fruits in the pantry would work, e.g. blueberries, apples, pears, peaches, etc… maybe the next time I attempt this would be with apples and raisins… the crumble is made up of mostly oatbran and rolled oats in equal portion. If preferred using just rolled oats will work.

*preheat oven at 180degc

To prepare fruits, we will need to coat them with the 3 ingredients i.e. fine sugar, corn starch and freshly squeezed lemon juice
For the crumble – blend oatbran into flour. Blending takes 3 – 4min in the food processor. If using only 1 cup of rolled oats, blend half the oats into flour

Step 1 – in a bowl, add fine sugar, corn starch and mix well till there’s no lumps

Mix well so the fruits are well coated with the ingredients

Oat mixture should look like this consistency. **note – Before placing the fruits into a baking dish, grease with a little butter so the taste of fruits will be enhanced

After baking for 40min or so, we should be able to see the fruits bubble up/ boil. Let it bake for another 10 – 20min for the crumble to crisp up
Fruits should still be juicy and due to the lemon juice, fruits will taste tangy

Verdict – will definitely make this again with other fruits. It’s nice even when cooled and is refreshing to eat due to the juicy pineapple.
