Olives, sundried tomatoes and paprika muffins

Recently been to Basilico twice in a week, and thought the next muffin should have the taste of Italy… made with olives and sundried tomatoes. To spice things up a little, paprika was added.

Ingredients: (makes 16 small muffins)
Plain flour 200g
Baking powder 1 tsp
Salt 1/2 tsp
Paprika 1/2 tsp
Sugar 1 tsp
Eggs 2 beaten
Milk 125ml
Butter melted 50g
Kalamata olives sliced 100g
Sundried tomatoes julienned 75g

Directions:
1. Preheat oven to 180°c
2. Sift together flour, baking powder, salt. Then add paprika and sugar
3. Combine eggs, milk, butter and mix well. Then add olives and tomatoes, mix completely
4. Spoon batter into muffin cups so buttering or oiling the muffin tin is not needed
5. As the cups are small, bake for 13 – 15min. Serve immediately.
