Apple cinnamon & pecan cake with cream cheese frosting

Recently stumbled upon smitten kitchen’s post on applesauce cake and decided to try with my own twist to the recipe and method made easy.

Cake flour 150g
Cinnamon 1/2 tsp
Unsalted butter melted 50g
Caster sugar 75g
Vanilla extract 1 tsp
Eggs beaten 2
Applesauce unsweetened 100g
Pecan 1/2 cup chopped
Apple 1 cut into small pieces

1. Preheat oven 180°c, grease baking tin or/ line with parchment paper
2. Mix flour, cinnamon and sugar in a mixing bowl
2. Pour beaten eggs, vanilla, melted butter and applesauce, mix well
3. Add apple and pecan, mix thoroughly
4. Bake for 30min

Cream cheese 100g
Unsalted butter 25g
Vanilla extract 1/4 tsp
Icing sugar 1/2 cup
Cinnamon 1/2 tsp

1. Cut butter and cream cheese I to small pieces
2. Ensure butter and cream cheese are still cold, add vanilla extract and beat till fluffy
3. Sift in icing sugar and cinnamon
4. Beat till well mixed
5. Spread or pipe on thoroughly cooled cake
