Homemade Japanese sweet rusks

Whenever we are in Japan, we must buy their sweet rusks. Be it Tokyo Rusk or Gateau Festa Harada, we love them!

We’ve none of those in Singapore so decided to get my hands dirty and make some for the first time. It’s really easy to make though mine did not look as pretty and neat as the Japanese ones. However, they still tasted great!

Here’s my recipe:
3 tbsp sugar – I used raw sugar
25g butter softened- I used unsalted lurpak
A pinch of salt (if using salted butter, omit salt)
Baguette sliced to approx 8mm – 1cm thick

Instructions (about 20pcs)
1. Preheat oven at 180 degC
2. Cream butter, sugar & salt
3. Spread onto each toast generously and evenly to avoid some parts turning browner than others due to the sugar caramelization
3. Bake for 30min or till the toasts brown
4. Remove and let cool thoroughly on a rack
